Provenance

From a Tunisian grove to a sealed amber vial.

We work with three cooperatives across Cap Bon, Sfax, and Kairouan. Olives are pressed within four hours of harvest, sesame within twenty-four. Nothing is heated, nothing is refined, nothing is blended with imported lots.

Why a laboratory, not a kitchen

Every batch passes gas chromatography before it leaves the bench.

Botany is the easy part. Verifying that a cold-pressed oil still carries the lignans, polyphenols, and terpenes that make it worth using — that is the laboratory's job. We test, archive, and publish.
